The Aceto Balsamico Tradizionale di Modena D.O.P. is produced with must cooked in open boilers and with direct fire from lambrusco and/or trebbiano grapes. No addition of other substances is allowed, nor is it necessary. The acetification takes place during a very long time of aging in a series of barrels of different woods (chestnut, oak, acacia, cherry, mulberry, ash and juniper). The Aceto Tradizionale di Modena, to be called like this, must comply with a very strict discipline, which concerns the used grapes, the production process, the aging and even bottling. The only bottle allowed is the classic 100-ml bottle of Giugiaro.
The “Poema extravecchio” is made of lambrusco grapes from the province of Modena.
The very long aging, at least 25 years, makes it unique in flavour, density and characteristics. An absolute excellence for the palate, even tasted on its own.

The slow passage through numerous barrels of different woods transform the naturally acetified cooked must into a concentrate of flavour and harmony. The acidity is softened by the contribution of the cherry wood, making the “Poema affinato” flexible and suitable for any dish. It is recommended to use it always raw.
